My heritage as an African-American is Creole. But growing up in SW Louisiana, I was exposed primarily to foods of Cajun origin. As I grew older, traveled the world, and tasted so many of the very unique flavors of other countries and cultures, my style of cooking became extremely sophisticated, eclectic, and refined…with infusions of Creole and Cajun foods, flavors, and preparation techniques.
